Crepes Suzette
Ingredients:
¾ cup Plain Flour
Pinch Salt
3 Eggs
2tbsp Oil
¼ cup Milk
125g Butter
½ cup Sugar
3tbsp Lemon Juice
½ cup Grand Marnier
Method:
- Sift Flour and salt into bowl, make well in centre, and add whole eggs and oil. Work flour in from the sides.
- Add milk a little at a time, beating until smoother. Stand for one hour.
- Heat pan and grease lightly.
- From a small jug pour batter into pan. Turn so batter coats pan evenly.
- Cook slowly, loosening edges with a knife until set and lightly browned underneath.
- Turn and brown other side. Repeat with remaining batter.
- Melt butter in a clean pan and sugar. Cook over low heat until sugar melts and begins to caramelise.
- Pour in the fruit juices and stir over high heat until liquid reduces slightly and the caramelised sugar dissolves.
- Reduce heat and add folded pancakes and pour over the Grand Marnier, when warm set aflame.
- Place Pancakes on serving plates and pour over hot sauce.
