Capretto & Field Mushroom on Mashed Potato
Ingredients:
1 Field mushroom (per serve)
4 Potatoes
8 Capretto Chops
Garlic
Fresh Rosemary
Chilli
¼ cup White Wine
Method:
- Heat pan add olive oil.
- Clean mushroom & add to pan lightly fry.
- Add white wine to pan, cook until half evaporated.
- Place mushroom on a plate with mash potato.
- Pour remaining juices over mushroom.
- Clean and reheat pan with a little olive oil.
- Add chops season with a little salt and pepper.
- Add garlic, chilli and rosemary.
- Finish with a dash of white wine.
- Serve with field mushroom and potatoes.
