Capretto & Field Mushroom on Mashed Potato

Ingredients:Capretto & Field Mushroom on Mashed Potato
1 Field mushroom (per serve)
4 Potatoes
8 Capretto Chops
Garlic
Fresh Rosemary
Chilli
¼ cup White Wine

Method:

  1. Heat pan add olive oil.
  2. Clean mushroom & add to pan lightly fry.
  3. Add white wine to pan, cook until half evaporated.
  4. Place mushroom on a plate with mash potato.
  5. Pour remaining juices over mushroom.
  6. Clean and reheat pan with a little olive oil.
  7. Add chops season with a little salt and pepper.
  8. Add garlic, chilli and rosemary.
  9. Finish with a dash of white wine.
  10. Serve with field mushroom and potatoes.
