Chicken Satay sewed with Coconut Rice
Ingredients:
800g Chicken thighs (deboned)
1 small jar of Crushed Garlic
1 packet of Wooden Skewers
1kg of Long-grain rice
Lemongrass
Cumin spice
Curry Powder
Fish Sauce
1 Cucumber
1 can of Coconut Cream
1 jar of Chunky Peanut Butter
Method:
- Mix dry ingredients and oil together and marinade chicken.
- Skewer chicken (Soak skewer in water first).
- Cook over griddle or BBQ top until golden.
- Sauce - Mix ingredients for peanut sauce and simmer in saucepan until ready for serving.
