Chicken Satay sewed with Coconut Rice

Ingredients:Chicken Satay sewed with Coconut Rice
800g Chicken thighs (deboned)
1 small jar of Crushed Garlic
1 packet of Wooden Skewers
1kg of Long-grain rice
Lemongrass
Cumin spice
Curry Powder
Fish Sauce
1 Cucumber
1 can of Coconut Cream
1 jar of Chunky Peanut Butter

Method:

  1. Mix dry ingredients and oil together and marinade chicken.
  2. Skewer chicken (Soak skewer in water first).
  3. Cook over griddle or BBQ top until golden.
  4. Sauce - Mix ingredients for peanut sauce and simmer in saucepan until ready for serving.
