Pork Saltimbocca
Ingredients:
8 Pork Strip Loins or Pork Fillet Steaks
8 Sage Leaves
4 Slices Prosciutto
Olive Oil (to cover bottom of fry pan)
100g Butter
1 Ladle Beef/Chicken Stock
Splash of Dry White Wine
Salt & Pepper
Italian Parsley (chopped)
Plain Flour (for coating of meat)
Method:
- Beat meat with the flat side of a mallet.
- Place a sage leave onto each side and then add half a slice of prosciutto.
- Fold over a corner and beat flat.
- Lightly dust with flour and heat olive oil in a heavy pan and add butter.
- Add pork and sauté quickly on one side.
- When golden brown turn over, add stock, wine, salt, pepper and parsley.
- Cook the second side for a couple of minutes.
- Transfer to a service plate and spoon over the hot butter sauce.
- Serve with steamed greens or a mixed salad.
