Meatloaf
Ingredients:
500g Sausage Mince
500g Minced Steak
1 Egg
2 Onions (finely chopped)
1 cup fresh Breadcrumbs
2 teaspoons Curry Powder
1 tbsp Parsley
½ cup Water
½ cup Milk
Salt & Pepper
Sauce:
½ cup Water
½ cup Tomato Sauce
¼ cup Worchestershire Sauce
2 tbsp Vinegar
¼ cup Brown Sugar
1 teaspoon Instant Coffee
30g Butter
1 tbsp Lemon Juice
Method:
- Combine sausage mince, minced steak, breadcrumbs, onions, curry powder, salt, pepper, chopped parsley and a lightly beaten egg in a bowl.
- Beat until mixture is smooth and well combined.
- Gradually add milk and water, continue beating until mixture is smooth.
- Shape mixture into loaf, place in greased baking dish.
- Bake in a moderate oven for 30 minutes. Remove from oven, pour off excess fat.
- Pour sauce over meatloaf, return to oven and bake for further 45 mins, basting often with sauce.
- Sauce: Combine all ingredients in a saucepan, bringing slowly to boil, reduce heat and simmer for 5 minutes.
