Meatloaf | Roast Pumpkin and Pine Nut Salad | Mother In Law Pie

Meatloaf

MeatloafIngredients:
500g Sausage Mince
500g Minced Steak
1 Egg
2 Onions (finely chopped)
1 cup fresh Breadcrumbs
2 teaspoons Curry Powder
1 tbsp Parsley
½ cup Water
½ cup Milk
Salt & Pepper

Sauce:
½ cup Water
½ cup Tomato Sauce
¼ cup Worchestershire Sauce
2 tbsp Vinegar
¼ cup Brown Sugar
1 teaspoon Instant Coffee
30g Butter
1 tbsp Lemon Juice

Method:

  1. Combine sausage mince, minced steak, breadcrumbs, onions, curry powder, salt, pepper, chopped parsley and a lightly beaten egg in a bowl.
  2. Beat until mixture is smooth and well combined.
  3. Gradually add milk and water, continue beating until mixture is smooth.
  4. Shape mixture into loaf, place in greased baking dish.
  5. Bake in a moderate oven for 30 minutes. Remove from oven, pour off excess fat.
  6. Pour sauce over meatloaf, return to oven and bake for further 45 mins, basting often with sauce.
  7. Sauce: Combine all ingredients in a saucepan, bringing slowly to boil, reduce heat and simmer for 5 minutes.
