Porcini Mushroom Risotto

Porcini Mushroom RisottoIngredients:
500g Arborio Rice
200g Porcini Mushrooms
2L Chicken Stock
2 Onions
1 Garlic
1 Cup White Wine
150g Butter
200g Parmesan
100g Parsley
50mL Olive Oil
Salt and Pepper

Method:

    1. Usual risotto method.
    2. Cook down the onions and garlic in butter and oil.
    3. Add rice, then the wine.
    4. Gradually add the stock and the mushrooms.
    5. Finish with parmesan and parsley.
