Porcini Mushroom Risotto
Ingredients:
500g Arborio Rice
200g Porcini Mushrooms
2L Chicken Stock
2 Onions
1 Garlic
1 Cup White Wine
150g Butter
200g Parmesan
100g Parsley
50mL Olive Oil
Salt and Pepper
Method:
- Usual risotto method.
- Cook down the onions and garlic in butter and oil.
- Add rice, then the wine.
- Gradually add the stock and the mushrooms.
- Finish with parmesan and parsley.
