Hobbits Dessert

Ingredients:
½ cup Water
½ cup Mixed Currents
Vanilla Ice-cream
25g Hazelnuts (finely chopped)
2 tbsp Brown Sugar
2 tbsp Honey
1 tbsp Treacle
¼ teaspoon Ground Nutmeg
1 teaspoon Cinnamon
4 Large Apples
Method:
- Preheat oven to 180°C.
- Into a large bowl combine water, currents, nuts, brown sugar, honey, molasses, cinnamon and nutmeg.
- Using a peeler, peel stripes down the side of the apples for a nice visual effect.
- Slice off tops of apples and place the caps to one side.
- Using a teaspoon scoop out the apple core, but do not go through the base of the apple.
- Pack the apples with the mixture and place in an oven-proof dish.
- Place the apple caps back on top of the apples. Any left over mixture spoon over the apples.
- Bake in the oven for 34 to 45 minutes.
- Apples should be tender when done and this can be checked using a skewer.
- Remove apples from oven and allow to rest for a few minutes.
- Then place each apple on a serving plate with a serve of vanilla ice-cream to one side.
- Drizzle any left over juices onto the apple and enjoy.
