Agnello with Caper Sauce

Ingredients:Agnello with Caper Sauce
8 Lamb Cutlets
1 tbsp Flour
1 egg, beaten
1 cup fresh Breadcrumbs
½ cup Pinenuts finely chopped
1 tbsp chopped fresh Parsley
2 tbsp grated Pecorino Cheese

Caper Sauce:

500g Pasta Sauce
Garlic
Salt & Pepper
Olive Oil
Fresh Basil
2 tbsp Capers

Method:

  1. Preheat oven to 180 degrees.
  2. Coat cutlets in flour, egg then combined breadcrumbs, pine nuts, parsley and cheese.
  3. Press coating firmly.
  4. Place into a buttered baking dish.
  5. Dot each cutlet with butter.
  6. Bake in oven for 45 minutes.
  7. Serve with Caper Sauce.

    Caper Sauce:
  8. Place sauce, oil, garlic, salt, pepper and basil in a saucepan and bring to the boil and then simmer for 2 hours.
