Carrot Apple Cake

Ingredients:Carrot Apple Cake
2 cups Self Raising Flour
2 Eggs
1 cup Raw Sugar
1 cup Sultanas
1 cup grated Carrot (2 medium carrots)
1 cup coarsely chopped Walnuts
1 cup Apple (3 medium Granny Smiths)
1 Apple for decoration left unpeeled / uncored
¼ cup Oil – Olive or vegetable
¼ cup Milk

Method:

  1. Mix all ingredients in 3 Ltr. Casserole until well blended.
  2. Pat down evenly.
  3. Decorate with sliced apple uncored.
  4. Start on medium heat with vent closed until lid is hot, then lower heat and open vent.
  5. Bake with vent open approx. ¾ hour, low heat.
  6. Serve warm with custard or whipped cream.
