Couscous Salad
Ingredients:
¾ Couscous
1 cup of vegetable stock
Rocket or English Spinach
4 ripe Tomatos
¼ Red Onion, thinly sliced
¼ Lemon Juice
Salt & Pepper
Extra Virgin Olive Oil
Method:
- Boil water and add stock.
- Add Couscous and slowly stir.
- Cover and leave for 5 minutes.
- Wash Spinach and then add all the other ingredients together except Couscous, stir till combined.
- Make sure Couscous has cooled and then add it to the salad.
Tip: Put this salad together just before serving
