Quick 'N' Easy Carbonara
Ingredients:
1 packet Lean bacon or optional Pancetta
2 Eggs
1 tbsp chopped Parsley
Good handful of parmigiano cheese
1 Onion
Mushrooms (6) optional
500g Spaghettini Pasta
Method:
- In a 6.0 litre casserole bring water to boil and cook pasta until al dente – drain.
- In 32cm Bessemer Deep Frypan saute’, chopped onion, bacon or pancetta diced and mushrooms.
- In a plate, mix the eggs and add the parmigiano cheese & parsley. Mix well together.
- Add pasta to the mixture in the frypan and add egg and cheese mixture tossing pasta with nylon tongs as you pour the mixture.
- Serve piping hot.
