Avocado & Fetta Bruschetta

Ingredients:Avocado & Fetta Bruschetta
8 slices of Italian Bread
1 Avocado (diced)
200g Fetta (crumbed)
4 Roma Tomatoes (diced)
½ Red Onion (Finely diced)
Fresh Basil (chopped)
¼ cup Olive Oil
1 tbsp Vinegar
Salt & Pepper

Method:

  1. Toast bread in grill. Set aside.
  2. In a bowl, place tomatoes, avocado, red onion and basil.
  3. Drizzle with oil, vinegar and salt and pepper.
  4. Stir through gently trying not to bruise the avocado.
  5. Place spoonfuls on bread and sprinkle with crumbled fetta.
Serve!
