Avocado & Fetta Bruschetta
Ingredients:
8 slices of Italian Bread
1 Avocado (diced)
200g Fetta (crumbed)
4 Roma Tomatoes (diced)
½ Red Onion (Finely diced)
Fresh Basil (chopped)
¼ cup Olive Oil
1 tbsp Vinegar
Salt & Pepper
Method:
- Toast bread in grill. Set aside.
- In a bowl, place tomatoes, avocado, red onion and basil.
- Drizzle with oil, vinegar and salt and pepper.
- Stir through gently trying not to bruise the avocado.
- Place spoonfuls on bread and sprinkle with crumbled fetta.
Serve!
