Almond Fruit Flan
Ingredients:
1 ¼ cups Plain flour
90g Butter
3 tbsp Castor Sugar
1 egg
Ingredients for Filling:
125g Butter
? cup Castor Sugar
2 eggs
1 cup ground Almonds
1 tbsp Self Raising Flour
Fruit of your choice i.e. 2 pears, 2 apples or tinned peaches
2 tbsp Apricot Jam
1 tbsp Brandy (optional)
Method for Pastry:
- Combine all of the ingredients in the food processor and process until combined.
- Remove pastry from knead on a floured board.
- Press pastry into prepared flan tin, which has been sprayed, with cooking spray thoroughly.
- Pour filling into the base.
- Arrange fruit on top of the filling.
- Cook in pre-heated moderate oven for 35 minutes until golden brown.
- Remove from oven and brush with warmed apricot jam.
Method for Filling:
- Melt butter.
- Add sugar and combine thoroughly.
- Add eggs and mix well.
- Fold in flour and almonds.
Method for Warm Apricot Jam
Either put jam and brandy (or juice from tinned fruit can be used at this stage) into a microwave bowl and heat for about 1 minute on medium.
ORPlace jam and brandy (or juice) into a saucepan and warm through on low heat.
