Chicken Parmesan with Basil Sauce
Ingredients:
4 large Chicken Breasts, sliced through the middle in half
1 cup fresh Breadcrumbs
½ cup grated Parmesan Cheese
1 tbsp Parsley
90g Butter
1 teaspoon Worcestershire Sauce
Ingredients for Basil Sauce:
? cup Oil
¼ cup White Vinegar
1 clove Garlic, crushed
1 cup Fresh Basil Leaves, finely chopped
? cup Cream
Salt & Pepper (optional)
Method:
- Combine the breadcrumbs, cheese and parsley in a bowl.
- Melt the butter in a separate bowl and add crushed garlic and Worcestershire sauce.
- Either dip chicken breasts in butter mixture or lay chicken breasts in a roasting dish and pour butter mixture over the top.
- Press breadcrumb mixture over the top of each chicken fillet.
- Bake uncovered in pre-heated moderate oven for 25 – 30 minutes.
Method for Basil Sauce
- Combine oil, vinegar, garlic, basil leaves and cream in a saucepan.
- Stir until heated through and do not boil.
- Season with salt & pepper (optional)
