Chicken Parmesan with Basil Sauce

Ingredients:Chicken Parmesan with Basil Sauce

4 large Chicken Breasts, sliced through the middle in half
1 cup fresh Breadcrumbs
½ cup grated Parmesan Cheese
1 tbsp Parsley
90g Butter
1 teaspoon Worcestershire Sauce

Ingredients for Basil Sauce:

? cup Oil
¼ cup White Vinegar
1 clove Garlic, crushed
1 cup Fresh Basil Leaves, finely chopped
? cup Cream
Salt & Pepper (optional)

Method:

  1. Combine the breadcrumbs, cheese and parsley in a bowl.
  2. Melt the butter in a separate bowl and add crushed garlic and Worcestershire sauce.
  3. Either dip chicken breasts in butter mixture or lay chicken breasts in a roasting dish and pour butter mixture over the top.
  4. Press breadcrumb mixture over the top of each chicken fillet.
  5. Bake uncovered in pre-heated moderate oven for 25 – 30 minutes.

Method for Basil Sauce

  1. Combine oil, vinegar, garlic, basil leaves and cream in a saucepan.
  2. Stir until heated through and do not boil.
  3. Season with salt & pepper (optional)
