Pavlova
Ingredients:
4 Egg whites
1 cup Sugar
1 carton 300mL cream
1 teaspoon white vinegar
1 tbsp Cornflour
Fruit to decorate
Strawberries
Banana
Kiwi Fruit
Passionfruit
Mango
Method:
- Preheat oven to 150°C – Slow.
- Line a large oven tray with non-stick paper and draw a 20cm circle on the paper.
- Beat eggwhite with electric beaters in a large dry bowl until soft peaks form.
- Gradually add sugar. Beat for 5 – 10 minutes until all the sugar has completely dissolved.
- Add vinegar and cornflour and beat for another 2 minutes.
- Spread the mixture onto a tray inside the circle. Shape evenly.
- Bake 30 minutes or until pale and crisp. Reduce heat to 120°C and bake a further 10 – 15 minutes.
- Turn the oven off, leave Pavlova inside to cool.
- Top with whipped cream and arrange fruit on top. Drizzle with passionfruit pulp.
