Rabbit alla Cacciatore

Ingredients:Rabbit alla Cacciatore
1 Rabbit (cut into small pieces)
1 Onion (chopped)
3 rashes of Bacon
400g tin of Tomatoes
2 bottles of home-made sauce (otherwise 1 – 1½ bottles bought sauce)
¾ of 1 small bottle of beer
¾ cup of Plain flour
Bunch chopped Parsley
Handful black/green Olives
1 small tin of Mushrooms (whole)
Olive Oil

Method:

  1. Gently toss rabbit in seasoned flour.
  2. Brown lightly on all sides. Remove from pan.
  3. Add onions and cook until soft. Add bacon and cook till browned.
  4. Return rabbit to pan and mix with onions.
  5. Add half the parsley, tin of tomatoes and the sauce.
  6. Pour in between ½ to ¾ bottle of beer.
  7. Season with salt/pepper and stir until thoroughly mixed. Put lid on and lower heat. Cook for 1½ hours.
  8. Check occasionally to make sure it doesn’t stick to pan.
  9. About 5 mins before serving add the olives, mushrooms and remaining parsley.
  10. Serve with Polenta.
