Rabbit alla Cacciatore
Ingredients:
1 Rabbit (cut into small pieces)
1 Onion (chopped)
3 rashes of Bacon
400g tin of Tomatoes
2 bottles of home-made sauce (otherwise 1 – 1½ bottles bought sauce)
¾ of 1 small bottle of beer
¾ cup of Plain flour
Bunch chopped Parsley
Handful black/green Olives
1 small tin of Mushrooms (whole)
Olive Oil
Method:
- Gently toss rabbit in seasoned flour.
- Brown lightly on all sides. Remove from pan.
- Add onions and cook until soft. Add bacon and cook till browned.
- Return rabbit to pan and mix with onions.
- Add half the parsley, tin of tomatoes and the sauce.
- Pour in between ½ to ¾ bottle of beer.
- Season with salt/pepper and stir until thoroughly mixed. Put lid on and lower heat. Cook for 1½ hours.
- Check occasionally to make sure it doesn’t stick to pan.
- About 5 mins before serving add the olives, mushrooms and remaining parsley.
- Serve with Polenta.
