Stuffed Peppers
Ingredients:
12 Green Paprika Peppers
½ chopped Onion
1 – 2 Roma Tomatoes
2 – 3 tbsp Olive Oil
500 – 600g Beef Mince
½ cup Long grain Rice
3 slices sliced bread
½ cup of Water
Chopped Parsley (handful)
Salt & Pepper
Method:
- Wash and take seeds from peppers.
- Add onions to mince.
- De-seed the tomatoes, chop into small pieces and add it to the mince.
- Mix in the rice, salt, pepper and olive oil.
- Cut off crust from sliced bread, cut into quarters, put into a shallow dish, cover with the water and let soak for 5 – 10 mins.
- Squash the bread to a mush with a fork.
- Mix all ingredients with hands until evenly mixed. Add a little more water if mixture is firm.
- Take small handfuls and stuff mince into the peppers.
- Put into a dish with a little oil on the base. Pour a little oil over the peppers, salt and then cook in moderate oven on 175°C for approx 30 mins. Turn occasionally and serve with boiled green vegies.
