Pork Sausages alla Siciliana

Ingredients:Pork Sausages alla Siciliana
6 Thick Italian Pork Sausages

Method:

  1. Heat the pan until its hot and brown sausages all over.
  2. When partially cooked (or sausages feel firm), slice the sausages in half, but not all the ways through – so that they are butterflied and finish cooking the sausages face down on the split side.
  3. Place cooked sausages on a dish and top with roast capsicums and a sprinkle of parsley.
