Chicken Involtini
Ingredients:
5 Chicken Breasts
10 Slices of Ham
10 Slices of Noveigien Cheese
Filling
3 Eggs
200g Grated Cheese
2 tbsp Parsley (chopped fine)
3 cloves Garlic (chopped fine)
200g Fresh bread crumbs
Salt & Pepper
Mix all these ingredients together to form a paste
Sauce
200g Mushrooms (sliced)
1 glass White Wine
1 Onion (diced)
200mL Cream
Method:
- Slice chicken breast into very thin slices.
- Lay each piece down and place ham, cheese and the paste on the chicken breast.
- Roll very tight and coat in flour.
- In a pan with a little olive oil lightly seal the chicken and transfer to a baking dish.
- Once all Chicken Involitini are fried add mushrooms and onions to pan, sautee and add wine.
- Bring to the boil and add some cream and pour over chicken.
- Place in over for about 30 – 40 minutes on 200°C.
