Minestrone
Ingredients:
½ kg Beef Mince
3 Carrots
3 Potatoes
2 Onions (diced)
1 cup Beans Barlotti
½ Butternut Pumpkin
½ cup Peas
½ Cabbage
3 Stock Cubes
½ Bottle Tomato Sauce
Water (enough to cover vegetables)
Method:
- Fry mince in a little oil in a pot, add onions and fry for about 5 minutes until the mince begins to brown.
- Dice all vegetables and add to pot.
- Top with water, add stock cubes and sauce, salt and pepper and bring to the boil then simmer until vegetables are cooked about 1 – 2 hours.
