Spaghetti with Clams
Ingredients:
1kg Clams
500g Spaghetti
Sauce:
1 knob of Garlic (peeled & diced)
1 large Onion
Olive Oil (½ cup)
3 bottles Tomato Sauce
1 cup chopped Basil
½ cup chopped Parsley
1 Chilli (sliced)
Salt & Pepper to taste
Method:
- Heat olive oil in a large saucepan.
- Add onion & garlic and stir well.
- When the onion is transparent, add the tomato sauce & stir.
- Finally add the basil, parsley, chilli, salt & pepper and stir well.
- Bring to the boil, lower heat and simmer for about 1 to 1½ hours.
- While the sauce is cooking, place clams in a separate saucepan and steam until they all open up (discard any unopened clams).
- Drain all the liquid, then add a few scoops of the sauce into the clams & stir well.
- Boil spaghetti as per directions on the packet.
- Add sauce to the spaghetti and top with clams.
Best served hot.
