Brandy Alexander Pie

Ingredients:Brandy Alexander Pie
Crumb Crust
185g Plain Sweet Biscuits
90g Butter

Filling
125g pkt White Marshmallows
2 tbsp Milk
1 tbsp Crème de Cacao
1 tbsp Brandy
2 teaspoons Gelatine
2 tbsp Water
1¼ cups Cream

Method:

Crumb Crust:

  1. Crush biscuits finely.
  2. Melt butter, add to biscuit crumbs, and mix well.
  3. Line base side of 23cm sandwich tin with removable base.
  4. Refrigerate while preparing filling.

Filling:

  1. Put marshmallows and milk in top of double saucepan over hot water.
  2. Stir over low heat until marshmallows are melted.
  3. Add crème de cacao and brandy, cool.
  4. Sprinkle gelatine over water, dissolve over hot water; add to marshmallow mixture. Fold in whipped cream.
  5. Pour mixture into prepared crumb crust.
  6. Refrigerate 24 hrs before serving.
  7. Decorate, if desired, with extra whipped cream and grated chocolate.
