Spinach & Chicken Roly Poly
Ingredients:
250g Frozen Spinach
4 Eggs
1 tbsp Cornflour
½ teaspoon ground Nutmeg
Freshly ground Pepper
6 tbsp toasted Breadcrumbs
1 cup grated Gruyere cheese (or any cheese you prefer)
1 cup cooked diced Chicken
Fresh herbs (for decoration)
Method:
- Thaw the spinach and drain well.
- Separate the eggs and place the yolks, cornflour, nutmeg, and pepper into a food processor or mixed.
- Mix until combined.
- Beat egg white unstill stiff and mix in spinach.
- Fold the egg yolk mixture with the egg white mixture.
- Pour into lines 12x8 sponge roll tin.
- Bake on 190°C for 10 – 15 minutes.
- Turn onto clean tea towel sprinkled with breadcrumbs.
- Roll up from short side (like a sponge roll)
- Leave for approx 1 min.
- Unroll & sprinkle with cheese and chicken.
- Reroll & return to oven for 5 minutes and then slice.
