Tracy's Trifles
Preparation Time: 20 mins.
Ingredients:
1 pkt jam roll fingers
½ plain sponge
750g can peaches in mango juice (or fruit of your choice)
1 pkt jelly (pre made)
3 tbsp Custard powder
3 cups milk
2 tbsp sugar
8 desert glasses or bowls
Method:
- Slice jam roll approximately in ½ centimetre widths.
- Cut sponge into small cubes.
- Arrangejam roll slices around the bottom of each bowl and up the sides.
- Intoa pot bring to the boil 2 ½ cups of milk.
- Dissolve custard powder and sugar in remaining milk and add to the pot stirring continuously till the custard thickens up and comes back to boil.
- Take of the heat, and pour a small portion of custard in each bowl.
- Add a layer of sponge and slightly compress into the custard.
- Drizzle some juice from the peaches over the sponge to moisten, and top with 2 or 3 peach slices.
- Layer with some more sponge and moisten with more juice, top with custard. Decorate with remaining peaches.
- Top with jelly when custard is cold.
- Can be made the night before.
Serves 8.
