Thai Style Prawns on a Lime Salad
Ingredients:
Packet of Rocket
1 Carrot (thinly sliced)
2 Tomatoes (Diced)
1 Red Onion (Thinly sliced)
Juice of 2 Limes
300g Uncooked Prawns
1 Green Chilli (seeds removed)
½ tin Coconut Milk
2 tbsp Peanut Oil
½ tbsp Ginger
½ tbsp Garlic
1 tbsp Red Curry Paste
1 tbsp Brown Sugar
2 tbsp Fish Sauce
Method:
- Add all salad ingredients together and squeeze lime juice over salad.
- Put aside and fry prawns in peanut oil.
- Add red curry paste and all other ingredients until prawns are cooked.
- Add coconut milk and simmer for 2 – 3 minutes.
- Serve cold over salad.
- Coriander & beanshoots to garnish (optional)
