Thai Style Prawns on a Lime Salad

Ingredients:Thai Style Prawns on a Lime Salad
Packet of Rocket
1 Carrot (thinly sliced)
2 Tomatoes (Diced)
1 Red Onion (Thinly sliced)
Juice of 2 Limes
300g Uncooked Prawns
1 Green Chilli (seeds removed)
½ tin Coconut Milk
2 tbsp Peanut Oil
½ tbsp Ginger
½ tbsp Garlic
1 tbsp Red Curry Paste
1 tbsp Brown Sugar
2 tbsp Fish Sauce

Method:

  1. Add all salad ingredients together and squeeze lime juice over salad.
  2. Put aside and fry prawns in peanut oil.
  3. Add red curry paste and all other ingredients until prawns are cooked.
  4. Add coconut milk and simmer for 2 – 3 minutes.
  5. Serve cold over salad.
  6. Coriander & beanshoots to garnish (optional)
