Berry Cake
Ingredients: 
1 cup Plain Flour
100g Butter (melted)
1 Egg
½ cup Sugar
1½ teaspoons Baking Powder
1 teaspoon Vanilla Extract
3 cups Fresh or Frozen Berries (Blackberries, Raspberries, Blueberries)
Topping:
2 cups Sour Cream
½ cup Sugar
1½ tablespoon custard powder
2 Egg Yolks
1 teaspoon Vanilla Extract
Method:
- Preheat the fan-forced oven to 180°C. Lightly grease and add flour to a 23 cm springform tin.
- Mix together all cake ingredients except berries. Pour into prepared tin. Cover with berries.
- Beat topping ingredients together and pour on top of berries. Bake for 50 – 60 minutes.
- Serve with whipped cream and fruit.
