Berry Cake

Ingredients: Berry Cake
1 cup Plain Flour
100g Butter (melted)
1 Egg
½ cup Sugar
1½ teaspoons Baking Powder
1 teaspoon Vanilla Extract
3 cups Fresh or Frozen Berries (Blackberries, Raspberries, Blueberries)

Topping:
2 cups Sour Cream
½ cup Sugar
1½ tablespoon custard powder
2 Egg Yolks
1 teaspoon Vanilla Extract

Method:

  1. Preheat the fan-forced oven to 180°C. Lightly grease and add flour to a 23 cm springform tin.
  2. Mix together all cake ingredients except berries. Pour into prepared tin. Cover with berries.
  3. Beat topping ingredients together and pour on top of berries. Bake for 50 – 60 minutes.
  4. Serve with whipped cream and fruit.
