Baked Green Chicken
Ingredients:
6 Chicken Marylands
2 bunches of Coriander leaves (fresh & blended)
1 small tub Greek-Style Yoghurt (300g)
3 – 4 Green Chillies (Chopped)
1 tbsp Crushed Ginger
1½ tbsp Crushed Garlic
Mint Leaves (blended)
Salt
2 Lemons
2 – 3 Large Red Onions
Pepper Powder
Olive Oil
Method:
- Using a blender, blend coriander, mint leaves, roughly chopped onion, fresh chilli, ginger, garlic, fresh lemon juice to a finely minced paste.
- Using a large bowl add paste, yoghurt, salt and pepper.
- Mix ingredients together. Remove skin from chicken. (Any chicken pieces can be used) and cut slits into the chicken pieces to allow the marinade to get in, for more flavour.
- Place chicken in marinade and let sit for 1 – 2 hours.
- Drizzle oil on bottom of baking tray. Allow space between each chicken piece.
- Drizzle oil over the top of chicken before baking.
- Bake for 30 minutes on 200°.
- Turn chicken pieces over and lower heat to 180° for a further 45 minutes.
