Rice Noodle Salad with Sesame Dressing
Ingredients:
100g snow pea sprouts, stalks trimmed
150g snow peas, blanched
3 green onions, thinly sliced
½ cup coriander leaves
½ cup mint leaves
125g rice vermicelli, cooked and cooled
1 tbs sesame seeds, toasted
Dressing
30g ginger, finely grated
3 tbs soy sauce
1tbs mirin
2 tbs rice vinegar
1 tbs sesame oil
1 clove garlic, crushed
½ tsp castor sugar
Method:
- Squeeze ginger over a small bowl, retaining the juice.
- Discard the solids.
- Add the soy sauce, mirin, rice vinegar, oil, garlic and sugar and mix to combine. Set aside.
- Place the snow pea sprouts, snow peas, onion, coriander, mint and vermicelli in a large bowl. Toss with dressing.
- Serve onto individual plates and top with toasted sesame seeds.
Serves 4.
