Chicken Tikka Masala
Ingredients:
700g Chicken Breast
1 Onion
½ Cup Peeled Garlic Cloves
1 Medium Twig of Ginger
2 Limes
600ml Double Thick Cream
1 Red Chilli, Seeded and Finely Chopped
2 teaspoons Chilli Powder
5 teaspoons Ground Turmeric
1 Sprig of Fresh Coriander
Salt and Pepper
4 tbsp Vegetable Oil
Naan Bread or Steamed Basmati Rice, to Serve
Method:
- Chop the chicken in 1inch strips, place them in a bowl and add the chilli, the rind of both limes, some chopped coriander and salt and pepper.
- Let this sit while you preheat the oil in a large frypan fairly high.
- Chop the onion, garlic and ginger and add this to the oil.
- Once the onion in nearly brown add the butter, let it melt then add the chicken to fry.
- Once the chicken has been sealed reduce the heat, add the cream, turmeric and chilli powder.
- Let this simmer for 10 minutes, stirring throughout
- Add more coriander just before taking out to serve.
