Satay Chicken Sticks

Ingredients:Satay Chicken Sticks
8 large chicken tenderloins (cut to size)
1 clove garlic, crushed
3 teaspoons fish sauce
2 teaspoons grated fresh ginger
24 fresh Kaffir lime leaves
Lime quarters, to serve

Satay Sauce – Ingredients
2 teaspoons peanut oil
4 red Asian shallots, finely chopped
2 cloves of garlic
2 teaspoons grated fresh ginger
2 small red chillies (optional)
200 ml coconut milk
½ cup (125 g) crunchy peanut butter
2 tbsp soft brown sugar
2 tbsp lime juice
1 ½ tablespoons fish sauce
2 teaspoons soy sauce
1 fresh kaffir lime leaf

Method:

  1. Combine the chicken, garlic, fish sauce and ginger. Cover and refrigerate for approx 1 hour.
  2. To make the sauce, first heat the oil in a saucepan over a medium heat. Add the shallots, garlic, ginger and chilli. Cook for 5 minutes or until golden.
  3. Add the rest of the ingredients, reduce the heat and simmer for 10 minutes or until  the sauce has thickened.
  4. Thread a lime leaf and chicken strip on each skewer. Can be served with rice (optional).
  5. Place skewers in small bowl with juice on top. Place Lime on the side. If serving with rice, you can place this small bowl on a dinner plate and put rice on the side (on the dinner plate).
