Cheese Triangles 'Tiropites'
Ingredients:
Filling:
125g Feta Cheese
60g Tasty Cheddar Cheese (grated)
2 Eggs (beaten lightly)
2 tbsp Parsley (chopped)
¼ tsp Nutmeg
Pepper
Case:
500g Filo Pastry (room temp.)
¾ cup melted butter
Note: Preheat oven to 180°C
Method:
Prepare Filling:
- Finely crumble feta into a bowl, add grated cheese and mix.
- Stir in eggs, parsley, nutmeg and pepper to taste.
Shape Triangles:
- Cut each filo pastry sheet into four, stack and cover under a tea towel.
- Lay filo strip out and brush lightly with melted butter.
- Place a teaspoon of filling on one corner
- Fold corner over to make a triangle shape and continue to fold in triangles until the end of the strip.
- Place seem side down on baking tray and brush with melted butter.
- Cook in a moderate oven 180°C for 15-20 minutes until puffed and golden brown.
- May be served hot or cold
- May be frozen until cooking is required.
- Variation use ½ cup of Spinach in the filling
