Fish Moqueca
Ingredients:
4 Fish Cutlets (700g)
2 Lemons
2 Large Onions (sliced)
2 Cloves of Garlic
1 Red Capsicum (sliced)
1 Green Capsicum (sliced)
2 Large Tomatoes (sliced)
¼ teaspoon Saffron
200mL Coconut Milk
Salt
Olive Oil
Method:
- Marinate the fish with lemon juice and salt.
- Heat oil in a large pan.
- Add the onion and garlic, then lay the red & green capsicums and the sliced tomatoes on top.
- Place a lid on the pan and cook on low heat until the tomatoes are cooked.
- Spread the fish cutlets over the tomatoes, not overlapping each other and cook for about 15 minutes with the lid on.
- Pour in the coconut milk and just heat through.
- Serve with rice.
