Vietnamese Rice Rolls

Ingredients:Vietnamese Rice Rolls
15 Rice Paper Rolls
1 cup Cooked Chicken
1 cup Coriander Leaves
125g pkt Rice Noodle (Vermicelli)
4 Spring Onions (cut into fine strips)
1 Carrot (cut into fine strips)
½ Cucumber (cut into fine strips)
1 long Chilli, deseeded and thinly sliced (optional)

Sweet Chilli Sauce or Plum Sauce to Serve with

Method:

  1. Dip rice paper in warm water until soft.
  2. Place on a damp tea towel.
  3. Place all ingredients in the centre of the rice paper, fold to enclose.
  4. Place on platter with dipping sauce in separate bowl.
