French Onion Soup with Bread and Gruyere Cheese
Ingredients:
4 large onions (peeled and thinly diced)
60g Butter
2 Bay Leaves
1 teaspoon Sugar
2 tbsp Flour
1 teaspoon Minced Garlic
2 Oxo Beef Cubes
1 Oxo Chicken Cubes
3 cups Water (to mix with the oxo cubes)
2 cups Water (to add gradually at latter stage)
Salt and pepper
French stick
1 tbsp Butter (for bread)
1½ cups grated Swiss Gruyere with a little grated Parmesan cheese
Method:
- In a large saucepan, sauté the onions in butter on medium high heat until golden browned, but not burned, about 30 minutes. Add the sugar and flour help with the browning.
- Add garlic and sauté for 1 minute. Add the stock, bay leaf,and 3 cups of water. bring to boil then turn down heat and simmer for about 30 minutes.
- Gradually adding the extra 2 cups of water over the next half hour. Season to taste with salt and pepper. Discard the bay leaf.
- Cut French stick into inch thick slices, grate the cheeses, combine with butter and spread on the bread slices. place bread under grill and melt till golden brown.
- Place the cheese bread at the bottom of each bowl and then pour soup over the top.
- Serve immediately & serves 4
