Smoked Chicken, Coriander and Roast Sweet Potato Pot Pies

Ingredients:
1 Smoked Chicken Breast
½ bunch Coriander
2 Garlic Cloves
1 large Onion
½ Sweet Potato
Zest of 1 Lemon
50mL White Wine
50mL Cream
2 Sheets Puff Pastry
50g Romano Cheese
Salt
Pepper
Method:
- Preheat the oven to 220°C.
- Roughly cut Sweet Potato into inch dice.
- Place into a baking dish; add a little olive oil and season with salt and pepper.
- Then put in the oven for 20-30 mins.
- Cut Coriander roots, garlic and lemon zest finely.
- Cut onion in half and thinly slice, then cut smoked chicken in roughly the same size as sweet potato.
- Add coriander roots, garlic, lemon zest, sliced onion and chicken to baking dish.
- Put back into oven for a further 15-20 mins or until onions start to brown.
- Remove baking dish and add wine, cream and the leaves of the coriander and spoon mixture into ramakins and top with a little grated romano cheese
- Cut ½ inch strip of puff pastry and place around the lip of the ramakin.
- Cut a square of puff pastry and place over the top of ramakin.
- Put back into the oven until pastry has turned golden brown.
