Smoked Chicken, Coriander and Roast Sweet Potato Pot Pies

Smoked Chicken, Coriander and Roast Sweet Potato Pot Pies

Ingredients:

1 Smoked Chicken Breast
½ bunch Coriander
2 Garlic Cloves
1 large Onion
½ Sweet Potato
Zest of 1 Lemon
50mL White Wine
50mL Cream
2 Sheets Puff Pastry
50g Romano Cheese
Salt
Pepper 

Method:

  1. Preheat the oven to 220°C.
  2. Roughly cut Sweet Potato into inch dice.
  3. Place into a baking dish; add a little olive oil and season with salt and pepper.
  4. Then put in the oven for 20-30 mins.
  5. Cut Coriander roots, garlic and lemon zest finely.
  6. Cut onion in half and thinly slice, then cut smoked chicken in roughly the same size as sweet potato.
  7. Add coriander roots, garlic, lemon zest, sliced onion and chicken to baking dish.
  8. Put back into oven for a further 15-20 mins or until onions start to brown.
  9. Remove baking dish and add wine, cream and the leaves of the coriander and spoon mixture into ramakins and top with a little grated romano cheese
  10. Cut ½ inch strip of puff pastry and place around the lip of the ramakin.
  11. Cut a square of puff pastry and place over the top of ramakin.
  12. Put back into the oven until pastry has turned golden brown.
